Easy Meal - Melanzane Parmigiano

When the sky is grey and the rain won't stop falling, I always want to make this lovely dish using Aubergine and parmigiano cheese. It's a real winter warmer.

2 or 3 Aubergines
1 Onion (chopped)
2 Garlic cloves
carton of passata
50g Parmesan or gran padano (grated)
2 tbsp tomato paste
First I slice the aubergine length ways and grill them on the griddle pan with a bit of oil (you no longer need to salt aubergines as they are a lot sweeter these days). Put these to one side whilst you make the sauce.

 I gently fry the onions and then add the garlic until soft, next I add the passata and tomato paste. I bring to the boil and them simmer (add a few handfuls of Parmesan to the sauce). I often add a teaspoon of cocoa powder to make the sauce richer as well. 

Next put a layer of sauce in the bottom of a oven proof dish, then a layer of the aubergine, another layer of sauce, a layer of cheese and then keep repeating until all the aubergine has been used. I put a layer of sauce on top of the last layer of aubergine, sprinkle some cheese and breadcrumbs on top.

It then goes in the oven at 200c for 25 minutes or until breadcrumbs are golden brown. We usually eat with garlic bread. It's the perfect comfort food on a cold, drizzly day.
