Easy Meals - Lamb Tagine

For Christmas last year we asked for a Tagine as a present and until now we haven't actually used it (shameful, its months since chrimble). So we dusted it off at the weekend and made a gorgeous lamb tagine.

300g lamb (shoulder)
1 400g tin chopped tomatoes
1 Onion
1 Pepper
3 small carrots
2 cloves garlic
1/2 tsp cayenne
1/4 tsp cinnamon
1tsp coriander
1tsp cumin
1tsp paprika
1/2 tsp turmeric
200ml stock
Salt n pepper to season

Cut the lamb into small chunks and brown gently, fry the vegetables as well (only for a few minutes). I did this in a small frying pan as the tagine bottom is fairly thick so it won't fry.

Pour half the spice mix onto the lamb and vegetables and mix well whilst still frying. Move ingredients to the tagine and add the tinned tomatoes, add the rest of the spices and the stock. Mix well.

Put into the oven for 1hr 45mins at 180c and wait. We made up some plain cous cous to have with the dish.
