A Right Royal Jubilee Recipe

A lot of us are going to have BBQ's or join a street party to mark the Queen's Diamond Jubilee so I thought I'd share some of my favourite summer treats that are quick and easy to make.



Paprika Royal Jubilee Potato Salad

Steam Jersey Royals for 30 mins, cut into quarters and then whilst still warm toss with 6tbsp mayonaise, quarter finely chopped onion (can use red if you like), 1tsp paprika and then add a squeeze of lemon juice. 

This tastes lovely served warm but equally makes a great lunch accompaniment the next day.




Stuffed Sweet Peppers

Cut the around the stalk area (or push it in and then pull it outwards with all the seeds) and remove, add 1/2 chopped (finely) tomato and grated cheese in layers until nearly full - they always leak a bit so don't over stuff. 

Pop in the oven for 15 minutes  or until tender but not deflated and droopy (its a fine line so have a little check).


Home made burgers (makes 2 burgers)

Mix 250g mince, with half finely chopped onion, 1/2 tsp chilli powder, 1tsp Worcester sauce, 1/2 tsp paprika, salt and pepper. I usually mix all by hand, making sure it is all evenly mixed in. 

Mould into burgers and cook on a grilled pan (or bbq) to desired tenderness.


Serve all with a walnut salad and you have the perfect Jubilee party food platter to serve. It hardly takes any time at all to make - then you can sit back and enjoy the day
